This popular super market has done it again with another low-carb cauliflower spin on a classic dish! Trader Joe’s Cauliflower Gnocchi is among the latest of their gluten-free, carb-heavy substitutes. I have experimented with their cauliflower pizza crust as well and it didn’t disappoint. So when I came across their Gnocchi version with cauliflower, in the frozen food section, I couldn’t resist.
Here’s what you need to know about Trader Joe’s Cauliflower Gnocchi ingredients- it’s made with about 75% cauliflower, as well as cassava flour, potato starch, extra virgin olive oil, and sea salt. No wheat, sugar, dairy, or eggs are included here, and that translates to fewer carbs, with significantly less fat & calories than the more traditional potato-based varieties. I am sold on this!
As for the taste, it definitely impressed me. I sautéed it in a pan with a drizzle of avocado oil for about 6 min. The texture came out with a crispy outside and a nice soft inside. If someone else had made it and not have me explained the cauli base, I doubt I would have noticed a difference.
Here’s what I added to the sauté pan also:
A whole vine ripe tomato (chopped)
A tbsp pink Himalayan sea salt
A handful of arugula
A tbsp of Primal Kitchen Avocado Oil
The dish can easily serve 2 people. Between veggie prep and sauté finish, the entire dish takes less than 10 min to make.
