Happy 2018 guys! This post is about ten days late. I spent so much of last week in recovery from all the sweets I’d eaten during Christmas, searching for the secret elixir to help reduce my bloating and lack of energy. You know what helped? Veggies! It seems like a no-brainer suggesting this, but you’d be amazed at how many people skip them or treat them as an afterthought.
To be fair, cutting processed sugar and alcohol for January is a champion of detoxing also, but combining more vegetables with that approach has already done wonders for me in these first 10 days of 2018. Before you make that yucky face thinking of iceberg lettuce and broccoli, things that may sound boring to you, take a lot at this photo above. Some of my favorites are in it- buffalo seasoned cauliflower, pesto kelp noodles, kale salad with chickpeas, a medley of roasted carrots, Brussel sprouts, and potatoes- and I can promise you’ll want to eat them over and over again.
To live a mostly plant-based life has changed me in so many ways. I look for veggie options first when I eat out at restaurants. My creativity in cooking has blossomed – roasting, baking, broiling, boiling, sautéing, raw prep, etc. I eat more sea vegetables now too- seaweed salad, wakame, and kelp- things as a kid I would have cringed at! Ha! There is so much pleasure in good food, don’t you agree?
So let’s agree to a small challenge? Let’s say we aim for at least 2 large servings of vegetables per day. Throw spinach in your scrambled eggs. Add green beans to your dinner plate. Make a homemade tomato soup. Whatever gets you eating more veggies AND enjoying them too.
