In the years since I have been nutrition coaching, do you know the number one question I get from clients is this…”what can I quickly make that’s healthy AND convenient?” Well my friends, let me share with you this low carb burrito bowl.
This is not to say that a low carb option is healthier than a bowl with rice or potatoes or some other yummy carbohydrate. My main reason for making this recipe low carb is to cut out an extra step of making rice or roasting potatoes that you’d have to make in prepping for this low carb burrito bowl.
This is for the days when maybe you only have a few items left in your fridge, or maybe you are meal prepping on Sundays and need something quick and convenient to make for the week. This low carb burrito bowl has 5 ingredients in it- not including the seasoning which makes 6- all with good flavor and will keep you full for hours afterwards. What will take you the longest time to cook will be your choice of protein – fish, crumbled tofu (my dish here), ground turkey, grass fed beef, sliced chicken, even scrambled eggs! This whole meal will take 10min or less to create.
Here’s what’s in this low carb burrito bowl:
2 cups mixed greens
4 oz- 6oz protein of choice and season to taste
1/4 shredded cheese (organic dairy or non-dairy, Daiya is a good option)
1/2 cup salsa
1/4 medium avocado
1 Squeeze of lime
