You guys are really going to thank me for this one, especially if you are the crunchy snack type of person. One of my favorite things in life is popcorn. Even while having a gut intolerance to corn, there are periods of time where I just can’t quit it (the non-GMO kernels help). In an effort to find guilt-free choices to the standard buttery microwave selections, and the high fat movie theater options, my homemade kettle corn version brings me so much joy. It will for you also. This approach is low fat, sweet and salty, high in protein, and amazing on taste and texture. It should feel nice on the tummy being that it is gluten free and dairy free. So while I’m munching, I’ll share what’s in my current bowl.
• pan popped yellow kernels in a sauté pan on high with a tbsp of extra virgin coconut oil; cover until kernels are popped and add to a bowl
- 1 scoop of a chocolate flavored protein powder on top and shake bowl to spread • 1 tbsp vegan chocolate chips from Enjoy Life Foods
• a sprinkle of Cave Shake for their healthy fats and coconuty sweetness
• pink Himalayan sea salt
