Chocolate avocado dessert, oh man what a treat! For anyone who recalls cooling off during summer months as a kid with fruit cocktail or jello pudding, this treat is for you.
I’ve recently come off a sugar detox cleanse and I was researching desserts that are healthier and less processed. This recipe for chocolate avocado dessert stood out for me for various strong reasons. A) avocado contains healthy fats and fiber, B) the strawberries are a low sugar fruit and high in antioxidants, and C) the recipe encourages the addition of a chocolate protein powder (how nutritious is that!). The pudding has all the makings of what we refer to as keto and paleo friendly. This chocolate avocado dessert gets a double stamp of approval from me.
So I set about the task of finding a perfectly ripe enough avocado – not too hard and not too soft. I sought a perfectly tasty protein power to combine with it. You might be thinking, “Aren’t avocados for breakfast toast and guacamole?” and I too, had those same initial pre-judgements. I am glad this recipe proved avocados to be just as good for a sweet tooth as they are for a savory one. Its flesh truly takes on whatever flavors are added to it. With that said, here is what’s in this yummy spin on a childhood classic and keep us cool for the coming summer.
Chocolate Avocado Pudding- 2 servings (no bake time)
- A ripe medium sized avocado
- Scoop serving of Chocolate vegan protein powder (Orgain is one of my faves to use)
- One tbsp of unsweetened cocoa powder
- Use a stevia packet or two for light sweetening
- Two medium California strawberries (for topping at finish)
You will need a blender or food processor. Blend items 1-4 on the list of ingredients until the combination is a dark brown and smooth. Additionally, spoon into dessert cups and regifrigerate for an hour. Remove when time is ready and add a strawberry to each cup. They are ready to eat!
