These Baked Sweet Potato Fries are Grandmother-approved! One of the best parts about visiting my hometown is being spoiled with food. Is it like that for you guys too?
The first thing I noticed when I stepped into my grandma’s home was the smell of sweet potatoes. She had a plate of roasted wedges waiting for me, which I promptly scarfed down just after taking this pic. I’m pretty sure this serving was for two people, but they were so good, there was no room for calorie counting this time! That woman knows how I love tubers and I love you for that, Granny.
My favorite part about eating her version of these baked sweet potato fries is knowing they are healthy, low fat, and nutrient dense. They are such a rich source of antioxidants, beta carotene, vitamin C, and fiber (aim for 25 grams for females/ 30 grams for males).
Here’s how my Granny Elease makes these sweet beauties:
You will need:

One large sweet potato

Cookie sheet and foil

Nonstick cooking spray

Pink Himalayan sea salt
Instructions:

Pre-set oven to 400 degrees

Slice length wise along the potato into at least 8 parts

Spray aluminum foil with a nonstick spray and add the slices into the oven for 25 min

Sprinkle with sea salt when done baking

Serve and eat!
