COVID-19 has changed our lives, and one great thing to come out of it, is how much more we are cooking at home. The kitchen is my favorite area at home and now I’m dragging my flatmates into it too! Chris and I put together an easy family-size recipe this week that we think you’ll enjoy. Keep reading for our 4 ingredient Black Bean Soup!
April has some awesome National food holidays like Peanut Butter Day and Grilled Cheese Sandwich day! Since today is Nat’l Empanada Day, our black bean recipe will go great with these savory turnovers. We have a surplus of canned goods from our Costco runs a few weeks ago, back when we thought the world was ending. Luckily the grocery stores have remained open, so we’ve begun to use what we have of our stored canned goods and make this 4 ingredient vegetarian black bean soup!
I haven’t always loved black beans. Lima beans, garbanzo beans, green beans, and pinto beans have been more of my jam. I never found any dishes that really pulled me in with black beans other than the occasional black bean burger, until this we made. I also know how dense they can be on the tummy. One trick I’ve since discovered through research, is that by soaking them down for about an hour, if they’re in their raw form, really helps in being able to digest them. The canned version should be great then because they are soaking in liquid already.
As a nutrition coach and I’m aware of the many benefits of eating Black beans. They are high in protein, carbohydrates, fiber, and almost no fat. The great thing about them with cooking is how they easily take on the flavor of what they’re seasoned with. You could add cumin, chili powder, jalapeños, sea salt, etc. They are also a nice addition to a burrito bowl.
4 Ingredient Vegetarian Black Bean Soup
For this particular recipe, here’s what you’ll need to make the soup:
- 5 cans of black beans
- 1 container of vegetable stock
- 1 medium carrot (chopped)
- 1/2 jar of tomato sauce
You’ll need a large pot. Add the 4 ingredients in and set to medium heat for 30min. Season to taste with our recommendations of chili powder, pink sea salt, and cracked black pepper. When done, let the soup off a few minutes and then serve in bowls. This recipe can feed 4-6 people so it’s great for families or if you plan to meal prep it and eat it over a number of days.
If you’re into garnishes, here’s what you can top off your bowl of soup with:
- 1/4 avocado (chopped)
- 1 dollop sour cream
- 1 oz Shredded cheese
