It is funny how time changes things. A few years ago, I was not a fan of chia seeds let alone sharing a 10 minute chia seed pudding recipe. I knew their benefits, nutrition facts, and all the love people have for them. I just wasn’t on that trendy train. Fast forward to late September 2018; I was out for brunch with a client and he insisted we split the chia seed pudding for dessert.After a few no’s on my end, I finally caved and agreed to help him eat it.
Wow, was I impressed with it!! In fact, I was so enthralled with the dish I asked for a moment with the head chef to pick his brain about the recipe and how it was made. He was gracious in sharing the ingredients with me and I am eternally grateful because I can now share with you all this 10 minute chia seed pudding.
Back in the day, people used chia seeds in foods like tortillas, soups, and other baked goods. Originally grown in Mexico and South America, they were once thought to elicit supernatural powers for the Mayans and Aztecs. Pretty cool, right?! I can’t speak to any super powers but I can definitely agree to them being a “superfood”; high in fiber, protein, and omega 3’s. Now let’s explore this superfood pudding recipe!
10 Minute Chia Seed Pudding
Serves 2
Ingredients
1/3 Whole Foods canned organic coconut milk
1⁄4 cup chia seeds
1 tbsp almond slivers
1 handful of berries (can be blueberries, raspberries, etc)
2/3 Califia almond milk
1 tbsp Wildflower
Instructions
- Blend together the 2 milks and honey. Add chia seeds, whisk together and let sit for a few hours until gelled. Add the handful of berries and almonds when you are ready to eat!
